Ingredients:

8 Papa Pita Maya’s Tortillas, white

½ cup crumbled Mozzarella Company Queso Fresco

14 oz Mulay’s Chorizo, casing removed

8 eggs

Salt and pepper to taste

Salsa for serving (Try Naked Infusions or My Brother’s Salsa)

Instructions:

Whisk eggs in large bowl with salt and pepper to taste. Set aside. Cook chorizo in large skillet over medium heat, about 5 minutes. Remove excess grease, pour in eggs and cook 1 to 2 minutes. Heat tortillas in separate skillet about 1 minutes, flipping frequently. Fill heated tortilla with egg and chorizo mixture and sprinkle with queso fresco. Serve immediately with salsa.
